Is it as hot over there as it is here? I know, I know… it is soooo typical to start complaining when the weather is finally sunny and warm. What is with people that we always find a reason to complain about the weather? Is it raining, it is too wet. Is it sunny, it is too warm. Is it cloudy, it is too grey and the list goes on.

I will say this one thing though: I do find that it is always an all or nothing situation here in the Netherlands. It is either cold or so hot and humid that functioning normally becomes hard. But hey, I am not complaining! (Or did I just do that?)

Whatever the weather over on your side of the world, I love simple and delicious salads that make warm weather just that little bit cooler. In this case I have a beautiful tomato salad with asparagus that will make you happy. No matter what the sun or rain is doing to your mood.

Tomato salad for hot days

Servings: 1 person


  • 2 eggs
  • 100 gr green asparagus
  • 6 to matoes
  • radish cress
  • 2 tbsp dukkah
  • olive oil
  • salt and pepper


  • Cook the eggs to your liking. Prepare the rest of your salad in the meantime.
  • Cook the asparagus very short in boiling water, drain and rinse with cold water.
  • Cut the tomatoes in slices and arrange in a bowl or on a plate. Add the asparagus, some pepper and salt and sprinkle some of the radish cress on top.
  • Cut the eggs in two and place on your salad, sprinkle with olive oil and dukkah
