Salad with farro, tomato and chili dressing
Last week we were having dinner with friends at a restaurant in Amsterdam called Wilde Zwijnen. Worth a visit if you’re in the area as it is affordable and great food too. But the reason I am writing this is that I fell instantly in love with the plate they used for dessert and while they didn’t want me to buy the plate (why? why?) I quickly found out that the brand was called Steelite and an email was send quickly. Anyway, to make a long story short I found a lovely lady where you can hire the plates or buy them and we kind of made a deal.
I can use the plates for cookbooks or my blog and once I am done with them I can swap for other plates.. Now how cool is that. Things like that make me rather happy. Especially when it is so beautiful as you see above.
And of course I had to quickly make something to go on those plates and this is the first one. It’s a simple but delicious salad that is quick to put together and my favorite way of having lunch.

- 80 gr farro
- 1 avocado
- 100 gr cherry tomatoes
- Dressing
- 3 tbsp of greek yoghurt
- 2 tbsp of chili jam
- juice of 1/2 lemon
- mint chopped finely
- pepper
- salt

Cook the farro according to instructions on the package. Drain and leave to cool.

Clean the avocado and sprinkle with a bit of the lemon juice. Cut the tomatoes in quarters or halves and mix with the farro and the avocado.

Make the dressing by combining all the ingredients and mix some with the salad and serve the rest alongside
A great salad! I love farrow and this combination.
