The first time I made these delicious roasted pumpkin sticks they were a big hit. And for good reason because they are easy to make and just super delicious. I don’t know about you but by the name it is New Years Eve, I am usually done with eating. Too much deliciousness over Christmas, making up all the leftovers after Christmas and then one last celebration to start the New Year. I really start to look forward to healthier habits by the time the clock strikes midnight. So these delicious pumpkin on a stick treats are perfect. They’re a snack that makes you feel good about yourself. Now how’s that for the start of the New Year.
Healthy snacks
Obviously you can eat the roasted pumpkin sticks any time of year. Absolutely no need to save them for New Years, but it’s just a suggestion. You can eat them at any moment during pumpkin season.
How to make the pumpkin sticks
Of course the first thing you need to do when you’re making them is to find yourself a whole pumpkin. You can actually use ready cut pumpkin from the grocery store, but I do find that those tends to be cut very unevenly. So I prefer to cut my own pumpkin. I like to use smaller pumpkins for this. Easier to cut and you don’t need the whole pumpkin for making this.
You start by removing the skin of the pumpkin and cut them into even cubes. Add them to a large bowl and toss with some olive oil and sesame oil. Add a bit of soy sauce and the honey and shake it well so all cubes are covered with a bit of the marinade. You don’t need a lot of pepper and salt because the soy sauce is already salty enough. Sprinkle with sesame seeds. Now place them on a baking sheet in a single layer and roast in the oven for approximately 25-30 minutes.
As soon as they come out of the oven place them on sticks and serve right away. They’re best eaten warm although it’s also ok to eat them cold. I do prefer them warm though.

Roasted pumpkin sticks
Ingredients
- 1 butternut squash You need approx half a butternut
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- Preheat the oven to 200Ëš C. (400ËšF)
- Clean the butternut squash by removing the skin and the seeds and cut into cubes of aboout 2 by 1 cm.
- Make a sauce of the soy, honey and sesame oil and add the pumpkin cubes in. Make sure they all have a layer of the sauce. Put on a baking tray on a piece of baking paper and sprinkle with the sesameseeds
- Put in the oven and bake for about 25-30 minutes. As soon as it is done, put the cubes on a stick for easy serving
