Fennel salad with pomegranate and goat cheese

Almost Christmas

Can you believe it is december already? Whatever happened to the year? In just three weeks time I am up for the exam for my holistic nutrition course. The first test exam we did a few months ago, I failed miserably, but thank goodness, the one we did yesterday I passed with flying colors. That at least gives me more confidence. The exam is on december 21st so keep your fingers crossed for me on that day!

One of the things we have learned is the effect that good food has on your body. And I knew it had a lot of effect but now I know which things work together, what doesn’t work together and how it all interacts with the organs. Thinking about what a fine ‘machine’ the human body is! At least it is if it runs well and you give it the proper things to thrive on. And that is one of the biggest problems in our current society. We do NOT give our body the right things, so it falls prey to a host of diseases that could partially be prevented by simply paying more attention to what we put in our mouths.

I’ll maybe share more on that in the near future, but for now I have this delicious fennel salad with pomegranate and goat cheese. And a small bunch of chervil on top. Quick, delicious and good for you! Especially in the coming month where there is probably an overload of not so healthy food, a good salad for lunch might keep you going! 🙂

Fennel salad with pomegranate and goat cheese


  • 1/2 fennel bulb, thinly shaved
  • 1/2 winter carrot, thinly shaved
  • 75 gr pomegranate seeds
  • 50 gr goat cheese, crumbed
  • handful of lamb's lettuce
  • small bunch of fresh chervil


  • 2 tbsp mayonnaise
  • 2 tbsp of vinegar
  • pepper and salt (optional)


  1. Mix all the salad ingredients together, except for the chervil, in a big bowl. Make the dressing and mix it in.
  2. Serve with some chervil!
