Let me first say that I was really happy with the response I got on my ‘soon-to-be’ new name. I mean, it is one thing to think of something, but something entirely different to announce it to ‘the world’. So thanks guys. Appreciate the feedback, always!

Now… in the meantime, I have been a bad girl in terms of healthy food. It is sooo hard to say no to sweets when you have to bake them all day. I’ve got to find a solution to that really. I mean, sure I give it all away to friends and family, but there is the tasting… And the tasting a little more..

Last week I had to do 14 recipes for a customer. All sweet, ranging from apple tarts, to rhubarb pies to chocolate cakes to pear tarts… They do new recipes about once a year, want me to make it, style it and shoot it. And then eat it… Well, the last is not really part of the plan, but uh… it does happen… My neighbours (who have young kids) are on holiday, so I cannot throw it over the fence, like I tend to do.. ;) I hate throwing food away, but I kind of have to sometimes with the amounts I have to produce at times. Anyway, to make a long story short; I’ve not been too good the last couple of weeks… Too busy, too little exercise. And when I am really busy I grab bad stuff quicker. I don’t know why that is really. It doesn’t make sense in a way, as good food would make me feel a whole lot better when I am busy… The weird ways of the logic of my brain.. Lol…

I should really be focusing on delicious salads like this one.  I just love fruits and cheese together and this salad is no exception. Strawberries and feta is more or less a classic combination, but I thought it might work well with some halloumi as well. Since that is my all time favorite cheese, I always keep a box of it in the fridge, ready to be used. And since it keeps a long time, that is always handy. I know cheese is fatty and halloumi is no exception but because it has so much flavor you really don’t need that much to put into your strawberry and tomato salad. Use a little sweet balsamico as a dressing and you’re good to go! Perfect for a hot summer day…!

Ingredients

  • 150 gr strawberries
  • 100 gr cherries tomatoes
  • 75 gr halloumi
  • mint
  • balsamico with fig or another sweet type

  • Wash the strawberries and cut them into pieces. Cut the halloumi into little squares and heat some sunflower oil into a frying pan. Put the pieces halloumi into the one once it is hot and quickly bake them golden brown. Be careful as it tends to spatter a bit.
  • Leave the halloumi to drain on kitchen towel. Put the strawberries and the tomatoes pieces into a large bowl and ad the halloumi in.
  • Drizzle with some balsamico and enjoy!
