Salad with farro, tomato and chili dressing
Last week we were having dinner with friends at a restaurant in Amsterdam called Wilde Zwijnen. Worth a visit if you’re in the area as it is affordable and great food too. But the reason I am writing this is that I fell instantly in love with the plate they used for dessert and while they didn’t want me to buy the plate (why? why?) I quickly found out that the brand was called Steelite and an email was send quickly. Anyway, to make a long story short I found a lovely lady where you can hire the plates or buy them and we kind of made a deal.
I can use the plates for cookbooks or my blog and once I am done with them I can swap for other plates.. Now how cool is that. Things like that make me rather happy. Especially when it is so beautiful as you see above.
And of course I had to quickly make something to go on those plates and this is the first one. It’s a simple but delicious salad that is quick to put together and my favorite way of having lunch.
Farro salad with avocado and chili dressing
- 80 gr farro
- 1 avocado
- 100 gr cherry tomatoes
- 3 tbsp of greek yoghurt
- 2 tbsp of chili jam
- juice of 1/2 lemon
- mint, chopped finely
- Cook the farro according to instructions on the package. Drain and leave to cool.
- Clean the avocado and sprinkle with a bit of the lemon juice. Cut the tomatoes in quarters or halves and mix with the farro and the avocado.
- Make the dressing by combining all the ingredients and mix some with the salad and serve the rest alongside
