Green tea noodle salad with smoked salmon
Originally this dish was made for one of the Donna Hay challenges I hosted years ago. It was a photography challenge with both photo and recipe from Donna Hay as the guide. But apart from the fact that I saw some amazing images come out of that challenge it is also a delicious recipe. So despite the fact that the contest was long ago, I wanted to keep the recipe alive.
Green tea noodles is not something you can find anywhere. I can sometimes find it in the Asian grocery store and sometimes I cannot. If I do I tend to buy some extra as I really love the flavor of the added matcha tea into the noodles. If you like the flavor of matcha than have a look out for this type of noodles.
Quick recipe
The recipe for these green tea noodles with smoked salmon and a spicy ginger dressing is easy. It is literally just a matter of cooking the noodles and mixing the dressing. The dressing is the hero here and you need pickled ginger to make it. Pickled ginger is typically what is served when you eat sushi. You know the slightly pinkish ginger slices? You can easily buy those in a jar and use them for this dressing.
It’s almost more of a green tea noodle salad than an actual warm noodle dish. You cook the green tea noodles and than you rinse it under cold water. So it does cool down a bit and combined with the crunchy radishes and the sprouts it’s super delicious.

The green tea noodles give this dish some flavor as well. It’s the combination that is so good. You can leave it to Donna Hay to come up with a fresh and delicious recipe such as this!

Green tea noodles with smoked salmon
Ingredients
- 200 gr green tea noodles
- 8 radishes trimmed and thinly sliced
- 250 gr smoked salmon
- baby shiso leaves or something similar
- black sesame seeds to serve
Pickled ginger dressing
- 80 ml rice wine vinegar
- 2 tbsp soy sauce
- 1/2 tsp sesame oil
- 1/2 tsp wasabi
- 2 tsp caster sugar
- 1 tbsp pickled ginger chopped
- Make the dressing by putting the pickled ginger, the wasabi, the soy, sesame oil, sugar and vinegar together in a bowl and whisk to combine. Set aside.
- Cook the noodles in a large sauce pan of boiling water for 3-4 minutes or until just cooked. Drain and refresh under cold water. Divide the noodles between the plates and top with the radish, salmon and the dressing. Sprinkle with the baby shiso and the black sesame seeds.
